White pepper is a hot, pungent spice that warms the Stomach and Large Intestine, clearing cold stagnation, relieving cold-pattern abdominal pain, and calming vomiting brought on by cold. The flavour is gentler than black pepper, though the warming nature is comparable. In AHM cooking, white pepper is the practical choice for light-coloured soups and congee where black pepper would discolour the dish.
White pepper contains the same piperine as black pepper — a well-documented COX inhibitor with analgesic properties that parallel aspects of NSAID activity; its AHM role in warming the Stomach and dispersing Cold complements its use for cold-type pain syndromes.
Contraindications
Avoid in heat patterns or Yin deficiency. Milder than black pepper but still strongly warming.
